Kim, I don’t recall your posting meat. Are you vegetarian?

No, Reg, I will eat meat, however I really try to limit my intake, particularly of red meat. We tend to mainly eat what we term ‘meatless meals’ as opposed to ‘vegetarian meals’, with one or two (sometimes more) meat meals per week.

I’ve landed in a very similar place. I eat a fair bit of fish though. Meat perhaps twice a week, like you.

That’s a first I’m completely unaware of. Until this morning, I would never have dreamed you let red meat pass over your lips.

I generally don’t so you were right. I don’t lay down any hard rules, though. If all there is to eat is beef, I eat beef. I almost never eat pork and can’t remember when I last did, but I would if it was the only thing available. When I talk about eating meat, I usually mean chicken.

I started to eat some meat in the beginning of the pandemic. I didn’t really like it. I can eat it but usually don’t. Not that strict. If I’m over for company and that is all there is, I’ll eat it.

Chipotle roasted cauliflower with coriander and lime

Cauliflower features regularly on our menu as it’s low carb and extremely versatile. This was a really easy and tasty side dish we had with with BBQ steak. Cauliflower florets tossed with garlic, chipotle seasoning and a slurp of olive oil, then roasted in a 200C/400F oven for 25 min. Serve with chopped coriander and lime wedges.

I tried cauliflower rice recently. It tasted great but made me pass wind which wasn’t an acceptable side effect. lol.

Yes, cauliflower rice is a fantastic alternative when trying to reduce the carbs. lol@ the wind. Yes, cauliflower definitely known for that, though hubby and son are a couple of wind bags regardless of what they eat lol

Vegetable Frittata with roasted purple potato, capsicum, zucchini, oyster mushroom, spinach. Placed under the grill to set and then topped with a dollop of Greek yoghurt and sriracha sauce. Delicious.
